Ryland loves it when Jamie decides to make fresh pasta. We found this basic recipe many many years ago and over the years Jamie has perfected it to something the whole family enjoys eating – and Ry LOVES to help him make it. We’re hoping to change it up sometimes, now that we’re wanting to rely a bit less on wheat flour – and I’d also like to try variations like beet pasta or spinach pasta! But for now, here is the basic recipe we use…..
1.5 cups all-purpose flour, plus flour for dusting
1 egg white
1 Tbl olive oil
1 tsp salt
Put the 1.5 cups flour in a mixing bowl and make a well in the centre. Put the egg, egg white, olive oil, and salt in the well. With a fork, pull the walls of flour into the well, blending together all the ingredients. Using your fingers, form the mixture into a ball. Add a little water to incorporate any remaining flour that will not stick to the dough, but keep the dough as dry as possible.
Jamie finds he needs to double the recipe for our family of five, and usually he makes linguine with our pasta maker, but we’ve also made ravioli and you could just use a rolling pin to thin the pasta out and then cut it into whatever shape you’d like. Usually we boil it in a large pot of water for about five minutes, and top it with any variation of topping – pesto, butter and cheese, variations on a tomato sauce theme, etc. A glass of red wine is awfully nice with it as well!
