This has been our favorite dessert ever since the berry season started. Mixed fresh berries, with raw cream and a little bit of chopped dark chocolate on top. So satisfying! I first made it when Erica and family were visiting, because I wanted to feed them dessert that wasn’t full of sugar.  There are no exact measurements for the cream. I use one can of coconut milk (full fat if you want it nice and creamy), and pulse with about 4 dates. Keep adding cashews until you get the consistency you like. Add a splash of vanilla extract. You have to process it well for it to get really smooth. It will keep in the refrigerator for at least a week, so don’t worry if you have a lot – it will get eaten. In fact, I’m eating some as I write this….
