Herb-Marinated Grilled Vegetables

This was an absolutely unexpected winner recipe! I made the grilled veggies as part of a tapas-style dinner for four. I thought I would have way more than enough, but they were gone within a few minutes. I usually don’t like super oily vegetables and very often that’s what they are when they’re grilled. These had oil, but it wasn’t the main flavor or texture, and it didn’t bother me at all. Yum.

They also gave me an excuse to go on Amazon and order this delightful grill pan, which I had been eyeing for months. The possibilities for grilled tofu, tempeh, seitan and veggies are endless, but it would have been a good investment even if all I could do was make this recipe over and over.
