Blood Orange-Fennel Salad

I confess I only like fennel in small doses. But it really does pair perfectly with the dark citrus flavor of blood oranges and the pepperiness of arugula. And this is the absolute quickest recipe to make from the cookbook…quicker even than any sandwich you could make for lunch! I threw it together before running off to yoga class, feeling refreshed and nourished. V. doesn’t like fennel at all, but this will become a lunch staple for me as long as the blood oranges are good!
