Pan-Seared Pine Nut Pesto Tofu
I love a good tofu sandwich, and the pesto tofu from the cookbook is perfect for this purpose. The recipe would have made 12 of these english muffin sandwiches, so I cut the amount of tofu in half but kept the pesto the same, so that we can have the extra on pasta tomorrow. And that’s still a lot of tofu sandwiches, but I think it won’t be a problem. They’re deeeeee-licious.
I toasted whole wheat English muffins, spread a little vegan mayo on the bottom, then the pan-seared tofu, avocado, and broccoli sprouts. A sprinkle of salt and pepper, and you have lunch! Tasty!
