Coconut Mint Frappe

This is the one thing I order every time we eat out at Candle 79. And I’ve been making it at home for years… ever since I first tried it. The avocado-mint-coconut-lime combination is so refreshing! It’s also pretty filling, so I have this for breakfast a lot. I’ve made the original version with agave, which is the best. Since I’m off sugar this month I substituted unsweetened apple juice, which was still very satisfying, but not quite the same.
